A beautiful Orange infused tart filled with a Dark Chocolate Mousse and Smoked Cherries.
It’s the festive season and its time for family gatherings which usually involve delicious food and of course desserts
When I curated this dessert I definitely had the holiday season in mind. Chocolate is such a beloved ingredient that I had to choose it to be the main character and the hero of this dessert
I had some left over ingredients from my previous dessert pairing that all I had to do was tweak a few things, to get this beautiful tart ready for the holiday season
Orange infused tart base
The tart base has the freshness and slight orange flavour that pairs well with the chocolate mousse. It’s well know that orange and chocolate are just a beautiful pair
Incorporating it into this dessert was a must especially with it being easy to do so. All you have to do is zest an orange and include it into your tart base recipe of choice.
This chocolate mousse is absolutely delicious
Chocolate Mousse Recipe
Ingredients
- Dark chocolate 250g
- 2 whole eggs and 3 egg yolks
- Sugar 50g
- Gelatin powder 12g
- Cream 500g
Directions
- Whip up 460g of your cream till it gets to stiff peaks, then place it in your fridge for later
- Bloom your gelatin with the 40g of remaining cream
- Use a double boiler to start melting your chocolate
- With a separate double boiler add in your eggs and sugar. Start whisking till it starts to look thick and pale in colour
- Melt you gelatin in your egg and sugar mixture.
- Whisk in your melted chocolate and then pass through a sieve to avoid any over cooked egg pieces or un-melted gelatin getting into you mousse
- Fold in your whipped cream into your chocolate mixture, try to not knock out too much air while combining the two.
- Cover the mousse with clingwrap, let it touch the mousse to prevent it from forming a skin and then store in the fridge for a few hours till it is firm to the touch.
- Once its ready you will paddle it either with a mixing machine or by hand, by doing this it will become silky smooth and you are ready to use it to assemble your tart. Try to resist eating the whole bowl.
Smoked Cherries
Nothing gets more festive that cherries and the combination with chocolate is just delicious. I wanted to add something different to the mix so I thought of smoking them
I cheated and went the simple route by adding some liquid smoke to the cherry compote. It’s a really effective was of getting that smokey flavour without all the hassle that comes with traditional smoking methods
I made a simple compote with the cherries and a few drops of the liquid smoke. A little goes a long way so be wary of that when using it, you don’t want it to be over powering and suddenly become the hero of the dish cause the chocolate is the star
I purchased the liquid smoke from my nearest woolies. You could use it for various things in the kitchen, and bonus is that it really last you quite a while since a little goes a long way
Festive Treats
