Utrecht really is a beauty and to experience it on the canals all while enjoying a three course of desserts, wines and great conversation. This menu I was really proud to share with those that attended. The first dessert I have been working on it for a while and struggled with getting to this point of being able to serve it. I has quickly become one of my favourite desserts that I have made so far. The one thing that I would change is how the Basil is added to the dish, I fried the basil to get it crunchy but I think I should have candied it instead. I’ll be doing that next time !

I got some assistance from Margret Wines and couldn’t be happier with how they worked together with the desserts. The best pairing in my opinion is the first course, the way the tomato flavour paired well with the Gewurztraminer is just magic. So tip of the day a Caprese salad is a winner if you plan on cooling of with a glass of Gewurztraminer. Side note am I the only one what struggles to pronounce this word SMH haha?

Caprese Marshmallow with Dried Basil – Paired with A Gewurztraminer Reserve from 2022 by The Domine Fernand Engel Alsace

Raspberry Mousse with Dark Chocolate and Crispy Bacon – Paired with a 2019 Rioja from Coleccion Vivanco Dulce de Invierno

Sweetcorn Panna Cotta with a Tres Leches Caramel and Popcorn – Paired with Dessert Wine from De Leanardo Vineyards called In My Next Life I Will Be Thin… Pass Me The Cookies Paired

The dessert that was the favourite of the day though according to the guests was panna cotta, because of it’s smooth texture and flavour. I didn’t expect it to be the fan favourite but with each event I’m pleasantly surprised that sometimes the classic style of dessert. Without putting the desserts up against each other but I’m reminded that the things that are appreciated in the end are the simple.

Upcoming events

We are half way through the year and we have two more events to go and the one for next season has already been planned. It will be in September and in collaboration with The Fools Utrecht, a new bar that I’m excited about. They have great drinks and the coolest vibe, we can’t wait to have a foolishly indulgent evening with you all that can make it
