Fall has been my favorite season for as far as I can imagine! the fiery colours displayed by nature absolutely forced me to Fall in Love. Now while I’m not a fan of the rain, that for me is a new addition to the seasons’ character since my move to The Netherlands. South Africa is pretty dry when it’s autumn.
This edition of the Dessert Club will be tipping it’s hat to what I appreciate about Fall. Unfortunately I won’t be spoiling you with a full on three course this edition, but with a mini tall cake that basically started my creativity in this business
The dessert on offer will be a Spiced Velvet cake with a Cream Cheese Mousse, Tres Leches Caramel and topped with Candied Beetroot
How I came up with this flavour was due to my disappointment in Red Velvet cake and that it actually just seemed to lack flavour for me other than the hint of chocolate flavour and the Cream Cheese icing. I’m a bit of a Kaas Kop so you don’t have to tell me twice to eat a bit of cheese haha. I then did research on the origin on the flavour and the involvement of beetroot is to get the bring red colour that everyone obsesses about, thanks to a chemical reaction that happens in the cake. I didn’t want to go to through the hassle of figuring it out in all honesty and I wanted it to be different. so it looks like more of a burgundy colour, thanks to the reduced food colouring.
The cake is spiced with All Spice to give it a little bit of warmth, and cozy vibe, and that paired with the cream cheese well that’s just delicious. I still wanted to incorporate the beetroot in some way and that’s how I stumbled on Candied Beets! They just represent the fiery leaves that nature puts on display and the crunchy texture that the leaves have as well but the beets will taste much better I promise !
The Tres Leches Caramel well I don’t think I have to explain the reason for this choice of filling for the cake. The cake will be more than enough for eight people or 4 really healthy slices of cake.
There will be a pick up location for the cake and it will be on the 5th of October! I still very much enjoy getting to know all of you and really bonding over desserts and life so we will be able to have a drink or two during the pick up of the your order The location will be disclosed via email to those who will be participating

I will be hosting a Dessert Pairing in collaboration with Paper & Tea and the dates are the 8th, 9th and 10th. Three days that you can choose from to come and be spoiled with a three course experience. More information will follow in the next coming weeks so if this tickles your fancy be sure to subscribe, to secure your tickets first. It will be an intimate session of 8 seats so it’s going to be cozy
